Color: Shades of bright green to bright greenish yellow.The bright green comes from the chlorophyll contained in unripe olives, which is also rich in natural antioxidants. Over time, the bright green becomes a bright greenish yellow.
Aroma: Fresh olives, rich, fruity, spicy and enduring. These characteristics are stronger the fresher the product is when consumed. Taste: Thin and pleasant fruity taste with a distinctive, mildly bitter aftertaste. These “sharper “characteristics are stronger than in our traditional Premium Organic Extra Virgin Olive oils.
Appearance: Filtration is the process by which the microscopic bits of the fruit of the olive are removed from the oil. Unfiltered oil will be cloudy until it settles to the bottom. Some consider unfiltered oil superior because of the added flavor from the fruit, while others say it shortens the oil's shelf life. Ultimately, it is a matter of personal preference.

Mana Gea’s Early Harvest is our first Extra Virgin Olive Oil of the year.
This Extra Virgin Olive Oil is produced entirely from Athinoelia green olives harvested from our orchards in late October. Athinoelia olives harvested early in the season are young and yield a small percentage of oil, giving it an intense and robust flavor. Green olives have slightly less oil, more bitterness and are higher in polyphenols.
Fresh olives, rich, fruity, spicy and enduring
Many people like the peppery and bitter quality of early harvest oil. It is rich in nutrients and high in chlorophyll which explains its green color and grassy flavor. It is well balanced, robust but with an artichoke-grassy finish.
Unfiltered: Mana Gea Early Harvest Extra Virgin Olive oil is unfiltered. It has been decanted, but not filtered so that the vibrant, ripe flavors and expressive aromas are carefully preserved.
Limited Edition: The limited time available to collect the unripe olives, prevents the production of large quantities of our Mana Gea Early Harvest and no additional production can be made during the course of the year.
Mana Gea Early Harvest is a limited availability product that consumers can find in selected food stores for a short period each year.The oil tends to be more expensive because it takes more olives to make a bottle of oil.
